I read that if you have already eliminated all wheat and gluten from your diet before you have a biopsy to check for Celiac Sprue, the test will come up negative. In people with Celiac Sprue disease, eating wheat/gluten causes the vili in the small intestine to flatten. That's how they determine with biopsy if you have the disease.

After eliminating wheat/gluten for a few weeks- months, the vili return to normal, which will make the biopsy appear normal. So, you actually have to be eating the wheat/gluten at the time of the test in order for it to be accurate. I also read that the blood tests are not near as accurate as the biopsy.
