Janet,

Is it the meat itself or the size of the chunks? I cannot manage pork or beef unless the beef is ground and in something like goulash.

Yesterday I made chopped chicken livers which were delicious and easy to eat -- I melt 2 tablespoons of butter for a minute in the microwave, add a couple of garlic cloves and a chopped onion and cook for 3 minutes. Then I add a pound of chicken livers and cook for 15 minutes.

Meanwhile I boil two eggs on the stove.

When the livers have cooled just a bit, I put in the chopped up eggs and mash up the whole mess with my hand blender. I ate them for supper with crackers.

I use the hand blender on everything -- sweet potatoes, applesauce, canned fruit.

As for protein -- cheese, finely chopped chicken in casseroles, yogurt.
